I have a great suggestion for you if you are concerned about your Nephew. You can try Pizza with carrot sauce. The way I prepare this is by boiling carrots. When they are nice and tender, put in a blender and puree. Then add that puree to a tortilla. Add a mix of soy cheese and cheddar. I hope this helps
